A few years ago, we started a family tradition of going to the movies on Christmas Day. Once the presents are opened and the kitchen is cleaned up, it’s a great way to extend the together time. This year we can’t wait to go to the theater to see Daddy’s Home. It’s stepfather versus father in this new comedy starring Will Ferrell, Mark Wahlberg and Linda Cardellini that’s being released on Christmas Day. Just seeing the movie trailer makes me laugh.

Easy Vegetable Beef Soup

Ingredients:

  • frozen veggies in your favorite varieties – I used green beans, peas, and corn
  • beef or vegetable broth
  • canned or fresh tomatoes
  • fresh potatoes
  • fresh carrots (you could also use frozen)
  • 1/2 medium onion
  • beef stew meat
  • salt, pepper, garlic powder and other seasonings to taste

Instructions:

Dice the potatoes and place in a stock pot.  Cover with the beef broth or vegetable broth.  Bring to a boil and cook until potatoes are almost tender.

While the potatoes are cooking dice the onion and saute with the beef stew meat.  Season with salt, pepper, garlic powder and any other favorite seasonings.   Dice the carrots and saute them with the meat and onions as well.

When the potatoes are almost tender add the frozen veggies and continue to cook until veggies are warm through and potatoes are tender.  Add canned tomatoes or freshly diced and cook for a few more minutes.  I like to use what I have on hand.

After the meat is cooked and the veggies are warm stir the two together and serve!
