Now that the seasons are changing and the cooler weather is here, I crave comfort food that fills the tummy with fiber, protein, and vegetables. If you think of beans and rice as a side dish and not a main dish, this recipe may just change your mind! I try to serve meatless meals at least once a week and this one is so tasty that it is going in my regular rotation. Canned beans are one of most versatile and inexpensive pantry staples to have on hand.

Don’t you just love it when you get rave reviews from the family and the recipe is so much easier than it looks? Shhh.. this one is our secret.

Easy New Orleans Style Red Beans and Rice Recipe – Meatless Meals

 

Easy New Orleans Red Beans and Rice is a tasty meatless meal!

Ingredients:

1 cup white rice
1/2 red pepper, chopped
1 can (16 oz) Bush’s Light Red Kidney Beans, drained and rinsed
1 can (14 oz) diced tomatoes
2 cups vegetable broth or chicken broth
1/2 teaspoon oregano
2 teaspoons chili powder
1 cup water
Shredded cheese & cilantro (optional) for serving

In a large skillet, place rice, red pepper, beans, and tomatoes. Mix together.

Stir in broth, spices, and water.

Heat on medium-high heat and bring to a boil. Reduce heat to simmer and cover.
Simmer for 30 minutes or until rice is tender.

Sprinkle with shredded cheese and cilantro (optional) before serving. Traditional New Orleans style Red Beans and Rice recipes do not include shredded cheese but we like it. I also know there are cilantro haters out there so have it your way!

What is New Orleans Style Red Beans and Rice?

I learned that in New Orleans, their Monday tradition is to serve Red Beans and Rice.

Monday is laundry day and since the recipe can be made without a lot of attention, the women of the house let the beans cook all day while they were getting their other household chores done.

You will also find recipes where a leftover hambone is added for flavor or accompanied by sausage or pork chops. I think canned beans are a wonderful option, don’t you?

You will see many versions of this recipe, with and without tomatoes or tomato sauce. We enjoyed our adaptation and encourage you to try different recipes for this easy meal!

    First off my family loves Bush’s beans. Red beans, baked beans, whatever bean our choice is always Bush’s. I personally am a fan of red beans and rice. I can’t wait to try this recipe!

    First we love Bush’s beans. Doesn’t matter if it’s Baked, Red, or whatever. I do not eat red meat so this is a perfect option for me. I love red beans and rice. I think my family would really enjoy this also.

    Red Beans and Rice is one of my favorite dishes. I only use Bush’s Beans when I make it as well. Great post and great photos.

    I think i would love the red beans and rice recipe. It’s just too bad that my daughter is not much of a beans fan. Then again she loves lima beans for some reason. So go figure. I suppose I could try this out.
