Cranberry Almond Cookies Recipe

This Cranberry & Almond Cookie Recipe is easy and delicious. The cookies are so pretty too. They taste even better a few days after they are made, in my opinion.

Ingredients
  

  • 1 cup butter softened
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 1/2 teaspoon almond extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups dried cranberries
  • 1 cup sliced almonds

Instructions
 

  • Preheat oven to 375°F
  • In a large bowl, blend together butter and sugar with an electric mixer
  • Add eggs and almond extract and beat well
  • In a medium bowl, stir together flour, baking powder, and salt
  • Slowly add the flour mixture to the large bowl with butter and beat on low
  • Stir in cranberries and almonds
  • Add rounded spoonfuls to a non-stick cookie sheet
  • Bake for 11 minutes or until a golden brown
