Who doesn't love a delicious chicken sandwich? This Chicken and Avocado Panini recipe is perfect for your sandwich night at home!

- 4 white whole grain, or sourdough bread slices
- 4 t. Dijon mustard
- 1 4 oz. chicken breasts , grilled and thinly sliced
- 1 medium avocado , peeled and thinly sliced
- 1 tomato , thinly sliced
- 1 c. fresh baby spinach
- 1 c. mozzarella , shredded
- 2 t. olive oil
Heat your panini maker according to manufacturer instructions.
Spread one teaspoon of Dijon mustard onto each bread slice.
Top two slices of bread with one-half each of the slices of chicken, avocado slices, tomato, baby spinach, and shredded mozzarella. Add the remaining pieces of bread to top to form a sandwich.
Brush the paninis on both sides with the olive oil and grill until the bread is golden-brown on all sides and the cheese is melted. Do this for 6-8 minutes or according to manufacturer’s instructions.
Remove sandwiches from press, cut in half, then serve with fries and/or choice of side dishes. Enjoy!
