Chocolate Crinkle Cookie Recipe

Ingredients
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 3 large eggs
- 1 cup packed light brown sugar
- 1/4 cup unsalted butter , melted
- 2 tablespoons instant espresso granules
- 1 teaspoon vanilla extract
- 1 cup granulated sugar , divided
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 325°F
- In a large bowl, stir together flour, cocoa, baking powder, salt, and baking soda
- In a medium bowl, whisk eggs, brown sugar, melted butter, espresso granules, vanilla, and 1/2 cup sugar
- Slowly stir in flour mixture into the large bowl with the egg mixture
- Cover and chill dough in the fridge for 1 hour
- While waiting for the dough to chill, take out two small bowls and fill one with powdered sugar and the other with regular sugar
- Shape chilled dough into balls and roll in regular sugar and then into the powdered sugar and place on the cookie sheet
- Bake for 11-12 minutes
