Preheat oven to 325°F.
In a large bowl, use a mixer to blend butter, granulated sugar, and light brown sugar on medium speed.
Add egg, yolk, vanilla, baking soda, cream of tartar, salt, and cinnamon and blend together.
Slowly add in the flour.
For the cinnamon sugar, mix together the sugar and ground cinnamon in a small bowl then set aside.
Scoop dough and shape into balls, then roll ball into cinnamon sugar mixture to coat the cookies.
Bake for 10 minutes. Enjoy!
