In a large bowl, whisk flour, baking powder, apple pie spice and salt.
Peel, core and dice apples, toss in lemon juice in a small bowl.
Using a handheld or stand mixer with a paddle attachment, mix together the sugar and eggs until combined (frothy).
Begin heating canola or vegetable oil on the stove on medium-high.
Reduce the speed to low and add in the dry ingredients.
Mix until just combined.
Pour in the milk in a slow continuous stream as to not break the forming batter.
If too much milk is accidentally poured in, allow the batter time to absorb it before adding more.
Fold in the apples using a rubber spatula.
Test Fry: Drop ¼ cup batter or (use an ice cream scooper) and let fry until golden brown. Flip and fry until the second side is golden brown.
Remove from oil and allow to dry on paper towels.
Test the doneness of your fritters by inserting a knife in the center. If it is still raw in the center your oil is too hot and you should reduce the heat.
Fry the remaining batter and let drain on paper towels.
Prepare glaze and drizzle over apple fritters. If you prefer to drip your fritters in the glaze, you’ll need to add more milk to loosen up the glaze into an icing.
Let dry completely and enjoy!
