- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 lb shrimp , thawed Argentinian Red Shrimp
- 1 lemon , freshly squeezed and ½ lemon thinly sliced
- 2 tablespoons dry white wine can substitute water
- 8 oz pasta Angel Hair or any pasta
- 3 cloves garlic , minced
- 1 teaspoon red pepper flakes
- Kosher salt and pepper to taste
- Parsley for garnish
In a large pot of boiling water, cook pasta according to directions. I add a little olive oil to the pot to prevent sticking.
Melt butter in a large skillet over medium heat.
Add the garlic to the oil. Watch it carefully to avoid burning it. You may need to turn down the heat a bit and just let it soften but not burn.
Add olive oil, shrimp and dry white wine. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes. Wild-caught Argentinian Red Shrimp cook in about half the time of traditional shrimp.
Stir in lemon juice and bring it to a simmer.
Drain pasta and toss with the shrimp mixture. Add lemon wedges. Season to taste with Kosher salt and pepper. Garnish with red pepper flakes and parsley. Serve immediately. Enjoy!
