Heat 1 tablespoon olive oil in a large non-stick skillet. Add red onions, ginger, scallions, and red pepper (if using). Sauté for 3-4 minutes.
Sprinkle in curry powder and stir.
Add ground beef and cook until brown and cooked through, approximately 10 minutes. Season to taste with salt and pepper. Set aside to cool slightly.
Remove the peel of the green bananas. Using a potato peeler, thinly slice plantain lengthwise into long chips.
Crack the egg into a small bowl and whisk.
Roll out the pastry dough and cut into 4” circles with a round cookie cutter.
Place 2 tablespoons of meat filling offset in the circle. Close each and seal the edges with a fork. Brush with the beaten egg.
Heat 3 cups of vegetable oil in a skillet with deep sides to 350˚.F
Fry the plantain slices in hot oil until crispy and light brown taking care not to let them burn. Drain the banana chips on paper towel and sprinkle them with salt while still warm.
In the same oil you used for the plantain, cook the Jamaican patties until they are golden brown. Flip it to ensure even browning. Ensure oil maintains temperature of 350˚F before adding additional patties. Remove cooked patties to paper towel and repeat until all patties have been cooked.
Serve hot Jamaican patties with fresh scallions, lime wedges and fried yellow plantains. Enjoy!
