Lori
This refreshing Copycat Passion Tea Lemonade recipe is a healthier version of Starbucks' popular drink. I used honey instead of refined sugar and infused the flavors of lemongrass and cinnamon for a delicious burst of flavor. It's perfect whenever you need a quick pick-me-up drink, plus it is wallet-friendly. Once you have a few simple ingredients, you can enjoy it all the time!

Cuisine American
- 5 1/4 cups water , divided
- 4 Tazo Passion tea bags
- 1/4 cup honey preferably local
- 4 " piece lemongrass , finely chopped
- 2 small cinnamon sticks
- 1/2 cup fresh lemon juice
- Ice to serve
- Garnish (Optional)
- Fresh lemon slices
- Sprigs of fresh mint
Bring four cups of water to a rapid boil in a teapot or saucepan. Remove from heat and add tea bags. Allow the tea bags to steep for several minutes before discarding.
To prepare the infused simple syrup, combine a quarter cup of water, honey, lemongrass, and cinnamon sticks in a small saucepan. Place over medium heat and simmer, stirring occasionally, until the mixture is heated through and thickens. Do this for approximately 4-5 minutes.
Remove from heat and pour through a fine mesh strainer to separate the solids from the liquid. Discard the solids and set the remaining simple syrup aside to cool.
Combine the brewed tea, lemon juice, and remaining cup of water in a large pitcher. Add the infused simple syrup to taste and stir to combine.
Serve over ice and garnish with fresh lemon slices and mint sprigs, if desired. Enjoy!
