Course Drinks
Cuisine American
- 1 cup blueberries (fresh or frozen)
- 3 tablespoons fresh mint , crushed
- 1-2 tablespoons real maple syrup
- 3 tablespoons honey preferably local
- 3 cups water , divided
- 1/2 cup fresh lemon juice
- 1 cup club soda
- Ice cubes to serve
- Optional Garnish: Mint sprigs fresh blueberries, lemon wedges
To prepare the blueberry maple syrup, combine the blueberries, mint, maple syrup, honey, and ¼ cup water in a small saucepan set over medium heat.
Simmer until the mixture is heated through and starts to thicken, about 4-5 minutes. Gently press the blueberries with a wooden spoon to release their juices while stirring.
Remove from heat and strain through a fine mesh strainer to separate the solids. Reserve the syrup and let it cool.
In a large pitcher, combine the lemon juice and remaining water. Add the blueberry maple simple syrup to taste and stir well.
Fill four glasses with ice and pour the blueberry lemonade mixture until each glass is ⅔ full. Top off with club soda and garnish with mint sprigs, blueberries, and lemon wedges if desired. Enjoy!
