Couscous with Green Apple Salad Recipe

This healthy couscous salad is made with simple ingredients. It’s an easy recipe and I enjoy it most of the time as a side dish for a main course like steak or grilled vegetables. You can also have it as your light lunch. It easily became one of my favorite salads.

- 1 C. Pearl couscous
- Sea salt to taste
- 2 Granny Smith Apples
- 1 C. Italian Parsley , chopped
- 1 C. Fresh Dill , chopped
- 6 to 8 leaves fresh mint , chopped
- 6 to 8 leaves fresh basil , chopped
- 1 lemon , juiced
- 1/4 C extra virgin olive oil
Cook couscous in lightly salted water according to package directions. For the best experience, couscous should be prepared al dente. When finished cooking, set it aside.
In a large serving bowl add your medium green apple, parsley, dill, mint, and basil. Toss to combine.
Add the cooked couscous to a large bowl. Combine it with apple and fresh herbs mixture.
Prepare the dressing by combining lemon juice, olive oil, and salt in a small bowl or jar.
Pour the fresh basil dressing over the salad mixture. Gently toss everything to combine.
Serve immediately. Enjoy!
