I’m back again with another delicious salad recipe. This time, it’s the Couscous with Green Apple Salad!
This healthy couscous salad is made with simple ingredients. It’s an easy recipe and I enjoy it most of the time as a side dish for a main course like steak or grilled vegetables. You can also have it as your light lunch. It easily became one of my favorite salads.

Couscous with Green Apple Salad Ingredients
- 1 C. Pearl couscous
- Sea salt, to taste
- 2 Granny Smith Apples
- 1 C. Italian Parsley, chopped
- 1 C. Fresh Dill, chopped
- 6–8 leaves fresh mint, chopped
- 6–8 leaves fresh basil, chopped
- 1 lemon, juiced
- 1/4 C extra virgin olive oil

How to Make Couscous with Green Apple Salad?
#1. Cook couscous in lightly salted water according to package directions. For the best experience, couscous should be prepared al dente. When finished cooking, set it aside.
#2. In a large serving bowl add your medium green apple, parsley, dill, mint, and basil. Toss to combine.
#3. Add the cooked couscous to a large bowl. Combine it with apple and fresh herbs mixture.
#4. Prepare the dressing by combining lemon juice, olive oil, and salt in a small bowl or jar.
#5. Pour the fresh basil dressing over the salad mixture. Gently toss everything to combine.
#6. Serve immediately. Enjoy!
