Ingredients for Easy Roasted Carrots with Curry

  • 2 lbs. fresh carrots, peeled and cut on the diagonal
  • 1 T. extra virgin olive oil
  • 2 T. honey, preferably local
  • 1 T. curry powder
  • 10-12 fresh thyme sprigs
  • Sea salt and black pepper to taste

Supplies Used

  • Large mixing bowl
  • Large rimmed baking sheet
  • Parchment paper or a Silpat™ baking sheet

How To Make Easy Roasted Carrots with Curry

#1. Place the top oven rack in the center position and preheat the oven to 400°F. Line a large, rimmed baking sheet with parchment paper or a Silpat™ baking sheet. Set aside.

#2. Toss carrots, olive oil, honey, curry powder, and fresh thyme into a large mixing bowl. Sprinkle with salt and black pepper to taste. Toss until well combined.

Prep time: 15 minutes Cook time: 20-25 minutes Serves: 4-6

#3. Pour the seasoned carrots into the prepared sheet pan and spread them into a single layer without overcrowding. Place in the preheated oven and roast for 20-25 minutes. Turn the carrots once halfway through cooking. The carrots should be crisp, tender, and nicely browned when ready.

#4. Remove from oven and transfer to a serving bowl or platter. Serve immediately with your choice of entrees. Enjoy!
