Creamy Roasted Garlic Hummus Recipe with a Tahini Free Substitution

Ingredients
  

  • 1 large head of garlic
  • 3 T. extra virgin olive oil , divided
  • 115- oz. (can) chickpeas , rinsed and drained
  • 3 T. fresh lemon juice
  • 1/3 c. tahini
  • 3 T. water
  • 1 t. ground cumin
  • 1/2 t. cayenne pepper
  • Sea salt to taste

Instructions
 

  • Preheat your oven to 400°F (200°C). Cut the top off the garlic head and drizzle it with a small amount of olive oil. Wrap it in aluminum foil and place it in the oven for about 40 minutes. Once roasted, let it cool for a few minutes.
  • Use a blender or a food processor. Combine the remaining olive oil, chickpeas, lemon juice, tahini, water, ground cumin, and cayenne pepper. After the garlic has cooled, squeeze the roasted cloves out of their skins and add them to the mix.
  • Blend until smooth. Add more water, if needed, to achieve your desired consistency. Taste and adjust the seasoning with sea salt as necessary.
  • Transfer the hummus to a serving bowl. Drizzle with extra olive oil, sprinkle with smoked paprika, and serve with fresh vegetables and olives. Enjoy!
