Delicious Watermelon Feta Bites - a Refreshing Lighter Appetizer

These delicious Watermelon Feta Bites perfectly combine the sweetness of watermelon, with the creaminess of feta cheese, and the tanginess of the balsamic glaze. You only need simple ingredients to create this and impress your family and friends at any gathering!

Ingredients
  

  • 8 oz. cream cheese , softened
  • 8 oz. feta cheese , crumbled
  • 3 tablespoons half & half
  • 1/3 cup balsamic vinegar
  • Fresh seedless watermelon , cut into 24 squares (1” each and about 1/3” thick)
  • 12 fresh basil leaves , stems removed
  • 1/3 cup pistachios , chopped
  • Garnish (optional: Small sprigs of fresh basil)

Instructions
 

  • Get a large mixing bowl, and combine cream cheese, feta, and half & half. Beat with a hand mixer or immersion blender until light and fluffy. Set aside.
  • In a small saucepan, heat the balsamic vinegar over medium-high heat. Bring to a gentle boil, stirring occasionally, until reduced by half and syrupy. Keep warm.
  • On a serving platter, drizzle some balsamic glaze and arrange half of the watermelon squares on top.
  • Using a pastry bag or plastic sandwich bag with a corner cut off. Use it to pipe the whipped feta onto each watermelon square. Top with fresh basil leaves.
  • Place another slice of watermelon on top and gently press down. Add more whipped feta and sprinkle with chopped pistachios.
  • Serve immediately, garnished with basil sprigs and a drizzle of balsamic glaze if desired. Enjoy!

Notes

  1. Prepare the whipped feta the night before to save time on the day of your gathering. Store it in an airtight container and keep it in the fridge.
