Ingredients
  

  • 1.5 lbs Ground Turkey or Chicken
  • 2 TBS Olive oil
  • 1.5 Cups Chopped Mushrooms
  • 4 Cloves of Chopped Garlic
  • 1 Cup Chopped Carrots
  • ¼ Cup Chopped Green Onions
  • ¼ Cup Sesame Oil
  • 1 TBS Dijon Mustard
  • 1 TBS Honey
  • 1 TBS Rice Wine Vinegar
  • 1 TBS Soy Sauce or Tamari if Gluten Free
  • 1 TSP Red Curry Paste
  • Sesame Seeds
  • Salt
  • Pepper

Instructions
 

  • Heat olive oil in skillet over medium heat.
  • Add in carrots and sauté for about 5 minutes.
  • Add in mushrooms and sauté for another 5 minutes then add in garlic.
  • At this point, the vegetables should be tender, add in ground turkey, break apart the turkey/chicken with a wooden spoon and mix the ingredients.
  • While the turkey or chicken cooks add the sesame oil, rice wine vinegar, dijon mustard, honey, soy sauce, and Thai red curry paste into a bowl and whisk together.
  • Pour sauce over ground turkey or chicken and mix well, and continue cooking until meat is completely browned.
  • Once turkey/chicken filling is done mix in green onions and sesame seeds.
  • Rinse and dry lettuce leaves, fill lettuce cup with a spoonful of filling, top with Siracha for extra spice and enjoy!
