Couscous with Green Apple Salad

This healthy Couscous with Green Apple Salad is made with simple ingredients. It’s an easy recipe and I enjoy it most of the time as a side dish for a main course like steak or grilled vegetables.

INGREDIENTS

- Pearl Couscous - Sea Salt - Granny Smith Apples - Italian Parsley - Fresh Dill - Fresh mint leaves - Fresh basil - Lemon - Extra virgin olive oil

Cook couscous in lightly salted water according to package directions. For the best experience, couscous should be prepared al dente. When finished cooking, set it aside.

STEP #1

In a large serving bowl add your medium green apple, parsley, dill, mint and basil. Toss to combine.

STEP #2

Add the cooked couscous to a large bowl. Combine it with apple and fresh herbs mixture.

STEP #3

Prepare dressing by combining lemon juice, olive oil and salt in a small bowl or jar.

STEP #4

Pour the fresh basil dressing over the salad mixture. Gently toss everything to combine.

Serve and enjoy!
