Sweet Potato Soup Recipe

This delicious Sweet Potato Soup is satisfying and budget-friendly! Easily adapt this recipe and take advantage of whatever vegetables and fresh herbs you have on hand.

Prep time: 20 minutes Active cook time: 7-8 minutes (+ time to come to pressure) Natural Release: 10 minutes Serves: 4-6 bowls of soup


extra virgin olive oil garlic carrots crushed red pepper flakes celery stalks red onion Sea salt & black pepper, chicken or vegetable broth sweet potato chunks


bay leaves cherry or grape tomatoes fresh baby spinach or arugula fresh lime juice parmesan cheese


Add olive oil to Instant Pot and select the “Sauté” function. Put garlic, carrots, celery, red onion, and crushed red pepper flakes.

STEP 1 - cont.

Stir it for a couple of minutes. Season with salt and black pepper, to taste.


Sauté everything in the large pot and stirring occasionally for 4-5 minutes. Do this until it’s fragrant and the vegetables start to develop some color.

STEP 2 - cont.

Deglaze by adding the vegetable or chicken broth and scrapping any brown bits off the bottom of the pot. Press cancel.
