How to Make Stuffed Fajita Chicken
Step #1. Begin by pounding the chicken to create a large thin piece. Sprinkle the chicken with your seasonings. Squeeze the juice of one fresh lime over the chicken breast. Marinate the chicken in the seasonings and the juice to make it taste even better! Step #2. Once the chicken is seasoned place several slices of pepper, onion, and tomato down the center of the breast. Top with a few pieces of fresh cilantro. 
Note: You could also add cheese if you’d like. This is not necessary though and without the cheese, it is gluten and dairy-free. Step #3. Carefully fold the sides of the breast up to meet in the center, covering the veggies in the middle. Use a baker’s twine to secure it. 
Step #4. Cook the chicken over medium heat on your grill until the internal temperature of the meat reaches at least 165 degrees. You’ll want to turn the chicken at least once as it cooks. Step #5. Serve hot over cooked rice or with your favorite tortillas. Enjoy!
