Try this easy and delicious grilled Fajita Stuffed Chicken Breast recipe. It’s full of amazing flavor and it’s one of my husband’s favorites. Here in Southern California, we can use our grill all year long.
Easy and Delicious Grilled Fajita Stuffed Chicken Recipe

Ingredients:
- chicken breast
- red onions
- green bell peppers
- tomatoes
- fresh cilantro
- fresh limes
- cumin, salt, pepper, and red pepper flakes
- Baker’s Twine
Instructions:
Begin by pounding the chicken to create a large thin piece. Sprinkle the chicken with your seasonings. Squeeze the juice of one fresh lime over the chicken breast. If you have time to marinate the chicken in the seasonings and juice, it will taste even better!
Once the chicken is seasoned place several slices of pepper, onion, and tomato down the center of the breast. Top with a few pieces of fresh cilantro.
You could also add cheese if you’d like. This is not necessary though and without the cheese, it is gluten and dairy-free.
Carefully fold the sides of the breast up to meet in the center, covering the veggies in the middle. Use Baker’s Twine to secure it.
Cook the chicken over medium heat on your grill until the internal temperature of the meat reaches at least 165 degrees. You’ll want to be sure to turn the chicken at least once as it cooks.
Serve hot over rice or with your favorite tortillas. Enjoy!
