Lemon Shrimp Scampi with Pasta
These Argentinian shrimp are jumbo-sized with a lovely red color. They taste like lobster and are very sweet. They are low in fat, very lean, and a good source of protein. I’ve tossed them into a salad and also enjoyed them in a simple shrimp cocktail.
My Lemon Shrimp Scampi Recipe served with pasta only takes about 20 minutes to have this delicious dish on the table. It’s the perfect dish for your busiest nights!
Ingredients for Lemon Shrimp Scampi with Pasta
- 2 tablespoons of butter
- 1 tablespoon of olive oil
- 1 lb of shrimp (thawed)
- 1 lemon, freshly squeezed and 1/2 lemon thinly sliced
- 2 tablespoons of dry white wine (can substitute water)
- 8 oz of pasta (angel hair or any pasta you have on hand)
- 3 cloves of garlic, minced
- 1 teaspoon of red pepper flakes
- Kosher salt and pepper to taste
- Parsley for garnish (optional)
How to Make Easy Lemon Garlic Shrimp Scampi with Pasta
Step #1. In a large pot of boiling water cook pasta according to directions. I add a little olive oil to the pot to prevent sticking.
Step #2. Melt butter in a large skillet over medium heat.
Step #3. Add the garlic to the oil. Watch it carefully to avoid burning it. You may need to turn down the heat a bit and just let it soften but not burn.
Step #4. Add olive oil, shrimp, and dry white wine. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes. Wild-caught Argentinian Red Shrimp cook in about half the time of traditional shrimp.
Step #5. Stir in lemon juice and bring it to a simmer.
Step #6. Drain the pasta and toss with the shrimp mixture. Add lemon wedges. Season to taste with Kosher salt and pepper. Garnish with red pepper flakes and parsley. Serve immediately. Enjoy!
