Kitchen Notes and Tips
- When sweet summer tomatoes are not available, substitute 1 can of diced tomatoes, drained.
- To make the salsa hotter: Add an additional 1 or 2 fresh jalapeños (Hot), 1 or 2 fresh Serrano chili peppers (Hotter) 1 habanero chili (Hottest)
- Prepare the Ranchero Salsa Fresca first as the flavors need to blend for at least one hour.
- You can definitely change things up whether it’s the choice of meat or choice of sauce.
Ingredients for Ranchero Burger Platter Recipe
For the Ranchero Salsa Fresca
- 3 medium tomatoes, seeded and roughly chopped
- 3 garlic cloves, finely minced
- 1 large yellow, orange, or green pepper, chopped
- 1/2 c. sliced green onions (5)
- 2 T. chopped fresh cilantro (plus extra for garnish, if desired)
- 1 finely chopped jalapeño, seeds removed**
- 1 large fresh lime, juiced
- 1/4 t. salt
- 1 T. olive oil
For the Hamburger
- 1-1/2 lbs. lean ground beef
- 1 medium onion, finely chopped
- ½ t. dried oregano
- ½ t. cumin
- Kosher salt, to taste
- Black pepper, to taste
To Plate & Serve
- 1 bag of corn tortillas, any color
- 1 medium head iceberg lettuce, thinly sliced
- 6 T. Sour cream or homemade ranch
- Chopped cilantro for garnish (optional)

How To Cook Ranchero Burger Platter
Step #1. In a non-reactive medium bowl, combine all fresh ingredients for the salsa. Chill for at least one hour. Taste and adjust salt if needed.
Step #2. Mix ground beef, onion, oregano, cumin, salt, and pepper, to taste. Shape into 6 ½” thick round patties.
Step #3. Grill or broil for 5-7 minutes on each side or until cooked to the desired doneness.
Step #4. When ready to serve, arrange a layer of tortilla chips in the middle of each serving plate.
Step #5. Top with a generous portion of Ranchero Salsa Fresca. Add a layer of crisp lettuce slightly larger than the size of your burger.
Step #6. Add the burger to the center of the plate. Top with sour cream. Garnish with cilantro. Enjoy!

Ranchero Burger Platter
Ingredients
For the Ranchero Salsa Fresca
- 3 medium tomatoes , seeded and roughly chopped
