I used an air fryer to make these and it turned out amazing. This great side dish is a perfect addition to your mealtime menu at home.

Ingredients for Crispy and Easy Rosemary Garlic Potatoes
- 2 lbs. small multi-colored waxy red potatoes, cut into equal, bite-sized pieces* (can use fingerling potatoes)
- 2 T. extra-virgin olive oil
- 2 t. dried rosemary
- ½ T. garlic powder
- Sea salt and black pepper, to taste
- Freshly shaved Parmesan cheese, to serve
- Sprigs of fresh rosemary, for garnish
- Optional: fresh parsley, for garnish
- *Red or another waxy potato can be substituted if desired

How to Make Crispy and Easy Rosemary Garlic Potatoes
#1. Turn on the air fryer and select the “Air Crisp” function. Set the temperature to 400°F and adjust the timer to 18 minutes. Press “Start” to pre-heat the air fryer.
#2. While the air fryer pre-heats get a large bowl. Combine the potatoes, olive oil, dried rosemary, and garlic powder. Add salt and black pepper, to taste. Toss to combine.
#3. When the air fryer beeps and flashes “Add Food,” pour the seasoned potatoes into the basket and spread them into an even layer without overcrowding. Close the lid to start air frying.
#4. After 9 minutes, lift the lid and carefully turn the potatoes with a plastic spatula so they brown evenly. Make sure they are still in an even, single layer.
Close the lid and continue air frying. Do this until the cooking time is complete and you achieve your personal preference for the potatoes’ golden perfection.
#5. Transfer the golden brown potatoes to a serving bowl or platter. Place freshly grated Parmesan cheese on top of the potatoes, if desired. Garnish with sprigs of leftover rosemary or parsley and serve immediately. Enjoy!
