I’m back again with one of my delicious chicken recipes! This time, I used an air fryer to make these Easy Rosemary Lemon Boneless Chicken Thighs.
This is a great recipe for a busy weeknight or for a meal prep. It’s made with simple ingredients that you can easily find at your local grocery store. I absolutely love the crispy skin of the chicken and the flavor of the seasoned potatoes. It’s a complete meal that requires minimal effort and is perfect for the whole family!

List of Ingredients for Easy Rosemary Lemon Boneless Chicken Thighs
- 4 bone-in, skin-on chicken thighs
- 3 T. extra virgin olive oil, divided
- 1 lb. small multi-colored waxy potatoes, cut into equal, bite-sized pieces*
- 2 T. extra virgin olive oil
- 1 t. dried rosemary
- 1 t. garlic powder
- Sea salt and black pepper, to taste
- 2 whole lemons, quartered
- Sprigs of fresh rosemary, for garnish
How To Cook Easy Rosemary Lemon Boneless Chicken Thighs
Step #1. Remove chicken thighs from the refrigerator 30 minutes before cooking. Wash and pat the skin side of the chicken dry using paper towels. Set aside.
Step #2. Turn on the air fryer and select the “Air Crisp” function. Set the temperature to 400°F and adjust the timer to 25 minutes. Press “Start” to pre-heat the air fryer.
Step #3. While the unit pre-heats, add the diced potatoes to a large bowl and top with one tablespoon of olive oil, the dried rosemary, and garlic powder. Season with salt and black pepper, as desired, and toss to combine. Set aside.
Step #4. Brush the chicken thighs with the remaining olive oil on both sides and set aside.
Air Frying The Chicken Thighs
Step #5. When the air fryer beeps and flashes “Add Food”. Place chicken thighs inside and close the lid.
Step #6. Place the seasoned potatoes around the chicken thighs. Spread them into an even layer. Close the lid to start air frying.
Step #7. After 12 minutes, lift the lid carefully turn the chicken thighs, and stir the potatoes so they brown evenly. Add the wedges so the lemon zest seeps into the chicken and potatoes. Close the lid.
Step #8. Continue air-frying the chicken and potatoes for another 10 minutes. Check the internal temperature of the chicken thighs with an instant-read meat thermometer. Remove the lemon wedges and adjust the final cook time, if necessary. This depends on the results.
Note: The safe cooking temperature for bone-in chicken thighs is 165°F. But for best results, aim for 170 – 175°F. Remove the chicken from the air fryer when the temperature is within this range. This is because the internal temperature will rise several degrees while the chicken rests.
Step #9. Remove your browned chicken thighs and roasted potatoes from the air fryer. Allow the chicken to rest for 5-10 minutes. Set aside and keep warm.
Step #10. Transfer the chicken thighs, roasted potatoes, and warm lemon wedges to a large serving platter. Sprinkle chicken with sprigs of fresh rosemary, if desired. Serve immediately and enjoy!
