How to Make Easy Lemon Garlic Shrimp Scampi with Pasta
#1. In a large pot of boiling water cook pasta according to directions. I add a little olive oil to the pot to prevent sticking.
#2. Melt butter in a large skillet over medium heat.
#3. Add the garlic to the oil. Watch it carefully to avoid burning it. You may need to turn down the heat a bit and just let it soften but not burn.
#4. Add olive oil, shrimp, and dry white wine. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes. Wild-caught Argentinian Red Shrimp cook in about half the time of traditional shrimp.
#5. Stir in lemon juice and bring it to a simmer.
#6. Drain the pasta and toss with the shrimp mixture. Add lemon wedges. Season to taste with Kosher salt and pepper. Garnish with red pepper flakes and parsley. Serve immediately. Enjoy!
