Easy Chicken Tortellini Skewers Recipe Ingredients
Chicken Breast Ingredients
- 16 oz. boneless, skinless chicken breasts
- 1 c. water
- 1 t. garlic powder
- 2 T. Italian dressing
- 1 t. onion powder
- Sea salt (or kosher salt) and black pepper, to taste
Note: Skip this step if using leftover grilled or rotisserie chicken
Remaining Skewer Ingredients
- 9 oz. package refrigerated tortellini or fresh tortellini
- 2 T. extra-virgin olive oil
- 1 pint large grape tomatoes, cut in half**
- 1 6-oz. can large black olives, drained
- ½ c. Italian dressing, divided
**If you’re using smaller cherry tomatoes, do not cut them in half.

- 15 10-12” Bamboo skewers (you can also use metal skewers)

How To Make Chicken Tortellini Skewers
#1. Place the chicken in a large freezer bag along with two tablespoons of Italian dressing. Seal tightly and turn each breast until coated on both sides. Place in the refrigerator for at least 30 minutes, turning once halfway through.
#2. Add the removable rack to the Instant Pot® cooking container and place the marinated breasts on top. Add water and sprinkle each breast with the garlic and onion powder. Season with salt and black pepper, to taste.
#3. Add the lid and lock it into place. Position the vent to “Sealing” and set the “Manual” setting to 8 minutes.
#4. While the chicken is cooking, boil water in medium-high heat. Prepare the tortellini according to package directions or until it’s al dente. Note: Add olive oil to the cooking salted water as instructed on the package to prevent sticking. Rinse and drain well. Transfer cooked tortellini to a large mixing bowl.

#5. When cook time is complete on the Instant Pot®, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure. Remove the lid and transfer the chicken to a non-permeable cutting board.
#6. When the chicken is cool enough to handle, cut into one-inch cubes and transfer to the large bowl with the tortellini.
#7. Add the olives and tomatoes to the bowl, along with two tablespoons of Italian dressing. Lightly season with salt and black pepper, to taste. Gently fold the ingredients with a spoon until thoroughly coated in the dressing.
#8. Get the rest of the ingredients. Use 10-12” wooden or metal skewers, thread 1 black olive, 1 grape tomato half, 1 chicken cube, 1 tortellini, 1 chicken cube, 1 or 2 pieces of tortellini, 1 tomato half, and 1 black olive. Optional: 1 piece of mozzarella cube. Repeat this process until all skewers are complete.
Note: The order listed above is just a suggestion. It looks nice if you begin and end each skewer with the same ingredients, but your preferences may vary.
Tip: When finished assembling the skewers, toss any remaining ingredients in a medium bowl with a little Italian dressing to serve on the side.
#9. This is the best part: to serve, transfer the finished skewers to a serving platter, and offer the remaining Italian dressing on the side. Enjoy!
