This homemade breakfast parfait is crunchy, sweet, filling, and loaded with nutrient-dense ingredients. The homemade granola is delicious with fresh berries or other fruit you have on hand. 

If you have a glass jar or mason jar at home, you can easily do this at night so it could be your healthy breakfast option or afternoon snack the next day. I enjoy making this Greek Yogurt Breakfast Parfait by layering it up and making it a creamy Greek yogurt snack bowl.

Why You Should Try This Greek Yogurt Breakfast Parfait

For me, breakfast is the most important meal of the day, and making this healthy yogurt parfait is perfect for my busy mornings. Making this breakfast parfait is an easy way to enjoy a delicious breakfast that is made with simple ingredients.

Kitchen Tips

  • Any remaining granola you make can be stored for up to two weeks in an airtight jar or sealed Ziplock® bag. Make sure to store it in a cool dry place.
  • If you don’t want to use Greek yogurt, you can use honey-flavored yogurt instead. You can simply add a drizzle of honey to plain yogurt and mix well.

What Fruits Do You Need? 

Like I said in an earlier paragraph, you can use fresh fruits like berries or any of your favorite fruits in this healthy parfait. I sometimes make one with fresh strawberries, a cup of blueberries, banana slices, and layers of yogurt. You can also add apple slices like I did in this recipe.

Cook time: 20 minutes
Serves: 4

Ingredients for Greek Yogurt Breakfast Parfait

  • 2 ½ c. rolled oats
  • ½ c. walnuts, chopped
  • ½ c. pumpkin seeds
  • 5 T. coconut oil
  • 5 T. maple syrup
  • 1 T. pure vanilla extract
  • 2 t. ground cinnamon
  • 1/16 t. salt
  • ½ c. dried cranberries
  • 2 C. plain Greek yogurt
  • Optional: Apples sliced, for serving

  • Mason jars
  • Airtight container or Ziploc bags (for the remaining granola)

How To Make Greek Yogurt Breakfast Parfait

Step #1. Preheat the oven to 350˚F. Line a large rimmed baking sheet with parchment paper.

Step #2. Combine oats, walnuts, pumpkin seeds, coconut oil, maple syrup, vanilla, cinnamon, and salt in a large bowl. Mix until ingredients are lightly coated with oil and maple syrup.

Step #3. Spread granola on the prepared baking sheet. Bake for 20 minutes, stirring after 10 minutes.

Step #4. Remove from oven and cool to room temperature. You will have crunchy granola as it cools.

Step #5. To serve, alternate layers of Greek Yogurt and a layer of granola in 4 parfait dishes or mason jars. This will highlight the delicious layers of your yogurt parfait. Add sliced apples, if desired. This may also be served as a breakfast bowl. Sprinkle with an extra dash of cinnamon on the top layer, if desired. Enjoy!
