Ingredients for Lemon Strawberry Shortcake
- 2 c. all-purpose flour
- 3 T. granulated sugar
- 1 T. baking powder
- 1/4 tsp salt
- 1 t. lemon zest
- 1-1/2 c. heavy whipping cream
- 6 c. sweet strawberries, sliced
- 1 lemon, juiced
- 2 T. sugar
- whipped cream, for filling the shortcakes, store-bought or homemade

How To Make Lemon Strawberry Shortcake
#1. Preheat oven to 425°F.
#2. Line a large, rimmed baking sheet with parchment paper.
#3. Get all your dry ingredients. In a large bowl, make your flour mixture. To do this, you need to whisk together flour, sugar, baking powder, salt, and lemon zest.
#4. Pour in whipping cream and stir with a spoon until a thick dough forms.
#5. Using a large spoon or cookie scoop, scoop the shortcakes onto the prepared baking sheet. You should get 8 medium-sized shortcakes.
Baking your Strawberry Shortcake
#6. Bake for 15-17 minutes or until the shortcakes are golden brown on top.
#7. While the shortcakes are baking, combine your juicy strawberries, sugar, and lemon juice in a medium bowl and macerate.
#8. Once shortcakes are baked, let them cool completely before slicing.
#9. When ready to serve, get your favorite dessert plates place each shortcake slice in half, and fill with whipped cream and macerated sliced strawberries. Enjoy your perfect strawberry shortcake!
