Ingredients for Watermelon Mint Lemonade

For the Mint Simple Syrup (optional)

  • ½ cup granulated sugar
  • ½ cup water
  • ¼ cup tightly packed fresh mint leaves, stems removed and crushed

For the Lemonade

  • 6 cups fresh watermelon, rinds removed and cut into chunks
  • ¾ cup fresh lemon juice (6-8 medium lemons)
  • ½ cup cold water (plus more if needed)
  • ½ cup fresh mint leaves, tightly packed with stems removed

Garnish

  • Fresh mint sprigs
  • Lemon slices

How To Make Our Refreshing Watermelon Mint Lemonade

#1. In a small saucepan, combine ½ cup granulated sugar, ½ cup water, and ¼ cup crushed fresh mint leaves. Heat over medium-high heat, stirring until the sugar fully dissolves. Reduce heat to low and let simmer for 10 minutes. Remove from heat, discard the mint leaves, and allow the syrup to cool completely before using. #2. Place 6 cups of watermelon chunks, ¾ cup fresh lemon juice, and ½ cup cold water into a blender. Blend until the mixture is completely smooth. #3. Pour the blended watermelon and lemon mixture through a fine mesh strainer into a large bowl or pitcher to remove pulp and seeds. Use a spoon to press the mixture gently and extract as much juice as possible. #4. Taste the strained juice and add more cold water if you prefer a lighter flavor. If you want it sweeter, stir in the cooled mint simple syrup a little at a time until you reach your desired sweetness. #5. Bruise ½ cup fresh mint leaves by gently crushing them with your fingers to release their oils. Place the mint at the bottom of a large pitcher or jar. Add ice cubes (consider using lemonade ice cubes to avoid dilution), pour the watermelon lemonade over the mint, and garnish with fresh lemon slices and mint sprigs. Serve chilled and enjoy!
