Ingredients
- 4 medium overripe bananas , peeled
- 1/4 c. almond milk
- 5 T. vegetable oil
- 2 t. pure vanilla extract
- 1/2 c. sugar
- 2 c. all-purpose flour
- 2 t. baking powder
- 1/4 t. salt
- 1 c. chocolate chips
- 1/2 c. almonds , chopped
Instructions
- Preheat the oven to 350 degrees F.
- Line a standard 8 x 4-inch loaf pan with parchment paper.
- In a large bowl, mash your brown bananas with the back of a fork. Add your wet ingredients: almond milk, vegetable oil, and vanilla extract into the mashed bananas. Gently whisk the ingredients to combine.
- Add the rest of your dry ingredients: sugar, flour, baking powder, and salt into the large mixing bowl. Gently mix until everything is incorporated and the flour mixture is mostly smooth.
- Use a rubber spatula to gently fold in the chocolate chips and almonds.
- Pour batter into the prepared loaf pan. Bake for 50-60 minutes or until deep golden brown and the middle of the bread is thoroughly cooked in the center. For best results, check the doneness by inserting a toothpick or cake tester into the center of the bread. Your toothpick or cake tester should come out clean with a few moist crumbs.
- Allow the banana bread to cool in the pan on a wire rack for a minimum of 30 minutes. Once cooled, remove the banana bread from the pan and slice to serve. Enjoy!
