I must warn you, these dip zucchini sticks are addicting! It’s one of my favorite ways of enjoying my zucchini at home. The Greek Yogurt Dip is my favorite dipping sauce for enjoying this healthy snack. It’s a great alternative for the whole family instead of fries. This recipe is made with simple ingredients that you can easily find at your grocery store.

Kitchen Tips

  • Zucchini naturally contains a lot of natural moisture. You can use paper towels to wipe its excess moisture. Often, it can be challenging to get crispy results when using baking as the method in this zucchini fries recipe. Best results are achieved from small, firm zucchini in this recipe.
  • You may also want to remove any large or excess seeds prior to dredging each piece in the seasoned breadcrumbs.

Can I Use Air Fryer to Make Zucchini Fries?

Yes! Just set your air fryer at 400F. Let the zucchini fries cook for 10 minutes or until they achieve the crispness you like. These air fryer zucchini fries taste just as delicious when baked in the oven.

Ingredients for Baked Zucchini Fries with Greek Yogurt Dip

  • 2 medium zucchini, halved and sliced into matchsticks, excess seeds removed
  • 2 large eggs, beaten
  • Sea salt and black pepper, to taste
  • ½ c. panko breadcrumbs
  • ½ c. parmesan cheese, finely shredded
  • Cooking spray

For the Greek Yogurt Dipping Sauce

  • 1 c. Greek yogurt
  • 1 T. lemon juice
  • ½ c. fresh parsley, chopped
  • ½ c. fresh dill, chopped
  • Sea salt and black pepper, to taste

How To Make Baked Zucchini Fries with Greek Yogurt Dip

Step #1. Preheat the oven to 400°F and line a rimmed lined baking sheet with parchment paper. Set aside.

Step #2. In a shallow dish or pie pan, gently whisk the eggs together. Season with salt and pepper, to taste.

Step #3. In a small bowl, combine your dry ingredients, panko and parmesan cheese, to make your breadcrumb mixture.

Step #4. Transfer panko mixture on a large bowl. Dip each zucchini piece into the beaten egg mixture. Allow excess egg whites to drain off each piece before transferring to the bowl of seasoned panko bread crumbs to dredge. Turn to evenly coat all zucchini slices before transferring to the prepared baking sheet.

Step #5. Arrange zucchini fries on the prepared baking sheet. Season with additional salt and black pepper, if desired. Lightly spray with cooking spray.

Step #6. Place in the oven to roast until golden brown and crisp, 25-30 minutes, flipping halfway through the baking time.

Step #7. Serve the hot zucchini fries on a separate bowl or a wire rack alongside the Greek yogurt dipping sauce. Enjoy the great flavor!
