Who doesn’t love fresh fruit, especially when they’re on delicious cookies? The recipe for these delicious strawberry cookies is something that I’m proud of and excited to share with you! It’s one of my go-to cookie recipes and I promise you won’t regret making these for yourself or your family and friends!

Ingredients for Strawberry Cheesecake Cookies
- 3/4 c. unsalted butter, softened
- 1/2 c. light brown sugar, packed
- 1/4 c. white sugar
- 1 large egg
- 1 t. pure vanilla extract
- 2 c. all-purpose flour
- 1 t. baking soda
- 1/2 t. baking powder
- 1/2 c. diced strawberries
- 6 oz. cream cheese, softened
- 1/2 c. powdered sugar
- 1/2 c. strawberry jam, warmed

- Airtight container (for your leftover cookies or cookie dough)

How To Make Strawberry Cheesecake Cookies
Step #1. Line a large, rimmed baking sheet with a piece of parchment paper or a Silpat® baking mat. Set aside.
Step #2. Combine light brown sugar, white sugar, and butter in a large mixing bowl. Whisk until smooth and fluffy. Do this for 2-3 minutes.
Step #3. Add egg and vanilla. Continue whisking until the mixture is smooth and the wet ingredients are combined.
Step #4. Add your dry ingredients: flour, baking soda, and baking powder into the large bowl. Gently fold in the flour until the mixture is combined and smooth. Fold your chopped strawberries into the cookie batter.
Step #5. Divide the mixture into 12 cookies. If you have a small cookie scoop, use it to make the balls of dough. Place the cookies on the prepared baking sheet and using the back of your spoon or your fingers, press an indent into the center of each cookie.
Step #6. Place the cookie sheet with the balls of strawberry cookie dough in the refrigerator to chill for 30 minutes.
Step #7. Preheat the oven to 350°F.
Step #8. In a small mixing bowl, combine the softened cream cheese and powdered sugar. Whisk until smooth and fluffy, 3-4 minutes.
Step #9. Remove the cookies from the refrigerator. Fill the indents with cream cheese mixture.
Step #10. Bake cookies in the preheated oven until golden brown and puffed. Do this for 13-15 minutes. Remove the cookies from the oven and place them on a wire rack. Set them aside to cool for 10-12 minutes.
Step #11. Drizzle the cookies with warm jam for extra flavor. Serve immediately. Enjoy!
