- 8 ounces white mushrooms, sliced

- 4 green onions, thinly sliced, white and green parts separated
- ⅔ cup dry Marsala wine
- 6 cups chicken stock, preferably organic
- 3 cups shredded rotisserie chicken

#1. Heat a heavy-bottomed pot or Dutch oven over medium-high heat.
#2. Add the olive oil and sliced mushrooms. Spread the mushrooms in a single layer to ensure even browning. Cook, stirring occasionally, until the mushrooms release their juices and brown slightly. Do this for about 6-7 minutes.
#3. Season with salt and pepper, to taste. This helps draw out moisture and enhances their flavor.
