- 3 tablespoons extra virgin olive oil
- 8 ounces white mushrooms, sliced
- Salt and freshly ground black pepper, to taste
- 4 green onions, thinly sliced, white and green parts separated
- ⅔ cup dry Marsala wine
- 6 cups chicken stock, preferably organic
- 3 cups shredded rotisserie chicken

How to Make Easy Chicken Marsala Soup
#1. Heat a heavy-bottomed pot or Dutch oven over medium-high heat. #2. Add the olive oil and sliced mushrooms. Spread the mushrooms in a single layer to ensure even browning. Cook, stirring occasionally, until the mushrooms release their juices and brown slightly. Do this for about 6-7 minutes. #3. Season with salt and pepper, to taste. This helps draw out moisture and enhances their flavor. #4. Add the finely chopped white parts of the green onion to the pot. Cook for just 1-2 minutes, stirring once or twice, until they become fragrant and slightly softened. #5. Increase the heat to high and pour in the dry Marsala wine. Let it bubble and cook until the wine has reduced to about 1/3 of its original volume for approximately 4-5 minutes. #6. Pour in the chicken stock and add the shredded rotisserie chicken. Bring the mixture to a boil, then reduce the heat to below medium. Let it simmer gently until the soup is heated through and the flavors meld together for about 4-5 minutes. #7. Remove the soup from the heat and ladle it into individual bowls. Garnish with the remaining green parts of the sliced green onions for a pop of color and fresh flavor. Serve immediately and enjoy!
