In this Chicken and Avocado Panini, you’ll combine the delicious tastes of my favorite ingredients like creamy avocado, melted fresh mozzarella, fresh spinach, and fresh tomatoes! These ingredients perfectly complement the grilled chicken breast in this delicious panini.

- To save time, you could have great options for the chicken: leftover chicken, rotisserie chicken breast, or off-the-bone chicken breast from where you get your deli meat. To add a little extra kick, arugula or baby power greens would be a nice alternative to baby spinach.
- If you have one, a panini press is the best tool for preparing this recipe. However, a grill pan (or even a large skillet) can also be used. For best results, use a clean heavy cast iron skillet or a spatula to press down on the roll while toasting.

Ingredients for Chicken and Avocado Panini
- 4 white, whole grain, or sourdough bread slices
- 4 t. Dijon mustard
- 1 4 oz. chicken breasts, grilled and thinly sliced
- 1 medium avocado, peeled and thinly sliced
- 1 tomato, thinly sliced
- 1 c. fresh baby spinach
- 1 c. mozzarella, shredded
- 2 t. olive oil

How To Make Chicken and Avocado Panini
Step #1. Heat your panini maker according to manufacturer instructions.
Step #2. Spread one teaspoon of Dijon mustard onto each bread slice.
Step #3. Top two slices of bread with one-half each of the slices of chicken, avocado slices, tomato, baby spinach, and shredded mozzarella. Add the remaining pieces of bread to the top to form a sandwich.
Step #4. Brush the paninis on both sides with the olive oil and grill until the bread is golden-brown on all sides and the cheese is melted. Do this for 6-8 minutes or according to manufacturer’s instructions.
Step #5. Remove sandwiches from the press, cut them in half, and then serve with fries and/or a choice of side dishes. Enjoy!
