Mahi Mahi Fish with Roasted Mango Chipotle Sauce Ingredients
- 4 6-oz. mahi-mahi fillets
- 2 T. extra virgin olive oil, divided
- Sea salt and black pepper, to taste
- 2 large fresh mangoes, peel removed and diced
- ½ large red onion, cut into thin wedges
- 1 T. fresh thyme leaves
- 1 T. fresh lemon juice
- 1/8 t. chipotle pepper
- Fresh thyme sprigs, for garnish
Supplies Used
- Large rimmed baking sheet
- Aluminum foil or a Silpat™ baking sheet
- Pastry brush
- Blender or Food Processor
- Medium Bowl
How To Make Mahi Mahi Fish with Roasted Mango Chipotle Sauce
#1. Place the top oven rack in the center position and preheat the oven to 400°F. Line a large, rimmed baking sheet with aluminum foil or a Silpat™ baking sheet. Set aside.
#2. Add the mahi-mahi fillets to the sheet pan and a tablespoon of olive oil on top.
Use a pastry brush to spread the oil evenly over the surface of the fillets. Season fish with a pinch of salt and black pepper, to taste.
#3. Arrange the chopped mango on the same baking sheet in a single layer without overcrowding.
#4. Add the red onion wedges and drizzle with the remaining bit of olive oil. Spread the oil with a pastry brush until the onion is completely coated.
Top the fillets and the onion with most of the fresh thyme leaves and season with salt and black pepper, to taste.
#5. Place the baking sheet in the preheated oven for 18-20 minutes, or until the fish cooks through and flakes easily with a fork. Remove from the oven and transfer to a medium bowl. Set aside and keep warm.
Making the Roasted Mango Chipotle Sauce
#6. Transfer the roasted mango to a blender or food processor and place the onions back in the oven to roast for several more minutes while you prepare the mango sauce.
#7. Add the fresh lemon juice, chipotle powder, and few fresh thyme leaves to the blender or food processor with the roasted mango. Season with a pinch of salt and black pepper, to taste.
Pulse until it looks like a smooth and creamy chipotle sauce.
#8. Remove the onions from the oven and divide between four serving plates. Top the onions with a baked mahi-mahi fillet and some of the roasted mango chipotle sauce.
The best way is to garnish it with sprigs of fresh thyme, if desired, and serve immediately with your choice of sides. Enjoy!
