There are not a lot of times that eating gluten-free bothers me, but the days that my family decides to enjoy things that used to be my gluten-filled favorites, those days are difficult.
This morning my husband decided to make breakfast burritos for our big family brunch. Burritos and fajitas are some of my favorite foods but they are just not the same with gluten free tortillas.
This morning I decided to make myself a Gluten-Free Breakfast Bowl using our Asiago Cheese Bowls. It was delicious and a great way to enjoy all your favorite burrito ingredients without the gluten.
Gluten-Free Breakfast Bowl
Ingredients:
- Potatoes
- 2 tbsp Olive oil
- Breakfast Sausage
- Eggs
- Salt and pepper to taste
- Shredded Cheese
- Asiago Cheese Bowls (click for the easy recipe- it’s great for salads too!)
- Salsa
Instructions:
Dice and saute the potatoes in a large skillet in the olive oil until they are golden brown and crisp. Season with salt and pepper.
Brown the breakfast sausage in a medium skillet, crumbling it as you cook.
Whisk and cook the eggs and season with salt and pepper cooking as you normally would cook scrambled eggs.
Combine all the ingredients into the Asiago Cheese Bowl.
Top with shredded cheese and salsa if desired.
You could add many other ingredients to this breakfast bowl too such as peppers, onions, bacon, or any other breakfast favorites!
